PALEO GRANOLA

INGREDIENTS
  • 1 & 1/2 cups mixed nuts (I used a bag of mixed roasted nuts that had walnuts, cashews, macadamia nuts and almonds but any mixture you fancy will do)
  • 1/2 cup shredded coconut
  • 2 tbsp coconut oil melted
  • 1/4 cup honey
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup dried fruit (I used chopped prunes but feel free to choose any dried fruit that you like)
INSTRUCTIONS
  1. Preheat oven to 325F
  2. Pour the nuts into your food processor and pulse a few times, just enough to chop the larger nuts into smaller chunks
  3. In a bowl combine the nuts, shredded coconut, coconut oil, honey, cinnamon and salt and mix well
  4. Place the mixture on a parchment lined baking sheet and spread out thinly
  5. Bake for 15 minutes
  6. Remove from oven and let cool, then break up into pieces, mix in the dried fruit and serve how you like (I ate it like cereal with almond milk, but you could also use light coconut milk, or sprinkle the granola on top of some berries)
